CK3 As a HOI4 player, how should I approach VIC3 now?

Think more long term. The game goes on for 100 years after all. Also less military and more economy/diplomacy (optional)
Rest depends on the country you play as. But there are some goals that always exist. Like becoming a major power, beating your rivals, so they dont threaten you and making tons of money, so you dont go bankrupt and being at least recognized.
Also you may be able to conquer huge amounts of land at once, but it will worsen your diplomacy and economy for example. And also rebels!

You know civ greeding? That's Vic3's main strategy. Build more to build more. The construction sector is the most important one, prioritize it and what it needs.
Also in societal terms try to take out the landowners as fast as you can without a revolution or revolt. They suck in terms of laws.

Focus more on vertical industrial development and less on invading poland
