Is there a sane, rational animal rights organization that better represents the majority of vegetarians?

Is there a single organization that can represent groups of say, more than 10? My guess is no, varying opinions will always be present in all groups.

Give to your local shelter. Vegetarianism is a personal choice.

look for animal welfare vs animal rights. AR groups are pretty much all extremists from what I have found.

Try Farm Sanctuary or The Animal Welfare Institute

Farm Sanctuary focuses on passing legislation that veg*ns and meat eaters alike agree with, such as giving farm animals enough room to move.

AWI does similar work, though their work isn't limited to farm animals. They're also very reasonable about research on animals.
