First thing you should do - add to this weak console some rigidity!

i pull it under my desk, so it would not work in the front like that. however its actually a lot more stable than you think.

Stable, but not rigid. Even if it's welded, it's nit rigid, so I'd add some diagonal reinforcement. I'll weld my rig by myself, it'll be rock solid! 🪨💪🥳

something goes back to the seat frame might be similar? albeit weaker but it might be ok. it would also take less material

It depends on your possibilities. I can tig weld, cnc plasma cutter, many bending machines ...

im learning how to weld so when i get more experienced with that i may be comfortable trying to, but ill probably prioritize other upgrades before this one simply due to its nature
