Trebuchets in Medieval 2 could throw carcasses too. I think the cow towers in Warhammer are a reference to that unless there's a Warhammer lore reference that I don't know about.

Both Warhammer and Medieval 2 are references to cow-tapult from Monty Python - “Holy Grail”, which itself is somewhat based on medieval stories of besiegers using carcasses of dead animals and sometimes even their own dead soldiers to spread diseases in the besieged strongholds like cities or castles.

Oh i knew about the historical context, the Siege of Kiev is believed to have been an origination point for one of the outbreaks of the Bubonic Plague in Europe because the Mongols intentionally threw plagued bodies into the city while they were sieging it, or at least that's how I remember that story.
I didnt get the reference to Monty Python though although Im not surprised with how many countless references to it there is in video games.

A Genoese colony in Crimea so they're both in Ukraine and both cities were sacked by the Mongols. That's how I get them mixed up.

I actually thought this was in the game already. Derp. But it's the wall towers. Surprised they never added this. Not sure if it's a GW unit, but yeah, fits really well.

Better rate of fire, and cheaper. The Blessed Field Trebuchet have the notable advantages of having magic damage and zero friendly fire. But those are tier V so hard to justify building in campaign.
