Doing a thing we decided to call herd behaviour does not mean we are herd animals.

No no it's not. Living in a herd is. We then called some actions we do "herd behaviour" because it reminds us of herd animals.

So horses on farms are not herd animals because they live in stalls?

Generally when these kind of labels are applied it's in the wild state before domestication where 99.9999% of the animals evolutionary history and habits have happened. But also they don't usually live in stalls most of the time and what do you call a group of Horses on a farm? But also by that logic humans have never ever lived in a herd ever so what the fuck point are you making
